1 pound ground turkey breast
1 c. zucchini, shredded (or carrot, or some other vegetable that sounds good)
1/2 c. cheddar cheese, shredded
1/4 c. minced red onion
1/8 c. minced fresh parsley (if you have it)
1/8 t. sea salt
2 t. canola oil for cooking the burgers.
Combine the six ingredients above in a bowl and blend thoroughly, then shape into four patties.
Heat canola oil in a skillet and cook burgers 6-8 minutes per side. Don't press the burgers with the spatula or weight them or they'll get dry.
Serve on whole wheat buns (we like whole wheat English muffins) with a mix of ketchup and mayo, plus vegetable fixings of your choice- onion, tomato, lettuce (Romaine perhaps?), pickles, etc.
